1 lb. ground beef
12 oz. chunky salsa
1 c. Sweet corn, thawed and drained
3/4 c. Miracle Whip or Miracle Whip Light Dressing
1 TBSP chili powder
2 c. crushed tortilla chips, divided (~7 oz. bite size chips, before crushing)
8 oz. shredded Colby/Monterey Jack cheese
(optional) shredded lettuce
(optional) chopped tomato
Heat oven to 350. Brown meat, drain. Stir in salsa, corn, dressing and chili powder. Layer 1/2 each of the meat mixture, chips and cheese in 2-quart casserole. Repeat layers. Bake 20 mins. or until thoroughly heated. Top with shredded lettuce and chopped tomato, if desired.
