Steelhead Trout with Orange-Ginger Glaze

Ingredients:
1 1/2 lbs. Steelhead Trout fillet
2 TBSP Balsamic Vinegar
1 TBSP EVOO (optional)
1 tsp dried Rosemary leaves, crushed

ORANGE-GINGER GLAZE
1 c. fresh squeezed orange juice
1/4 c, dry white wine
1 TBSP fresh lemon juice
1 tsp sugar
1/2 tsp grated fresh ginger
1/4 tsp white pepper
1/8 tsp salt

COOKING STEPS:
1.  Heat oven to 450 F.
2.  Combine ingredients for glaze in a small saucepan.  Bring to a boil, reduce heat to Medium or Medium-Low and simmer 15 to 20 mins. until reduced to the consistency of cream.
3.  Place trout, skin side down, in a shallow stainless or glass baking dish.  Combine vinegar, oil and rosemary and brush or rub over top of fish.
4. Bake 12 to 15 mins. or until fish turns from translucent to opaque and just begins to flake when tested with a fork.  Divide fillet into 4 portions, spoon glaze over top and serve immediately.
