Shrimp in Cream-Cheese Sauce
This recipe has a font as if it came from a magazine. But it is on paper that is like pink construction paper so maybe it was a magazine copied onto construction paper? It is then glued onto an index card.
I'm making this for book club. The novel was set by the sea. I'm only making half a recipe because I don't want to be stuck with a bunch of this and I'm only expecting 6 people including me.
First off - frozen soup? Never heard of it, didn't even look for it, just went straight to the Campbell's soup and got a can of Cream of Shrimp.
Happily I recently got free water chestnuts with a coupon and rebate so they were just sitting in my pantry looking for a purpose.
I only needed 2.25 oz. canned shrimp but of course the cans don't come that small. I figure I'll just put the whole 4.5 oz can in the soup because extra shrimp are always fun!
I thought about making toast points from homemade bread because I thought it needed to be thick sliced. But then when I read thin sliced I was going to buy a loaf of Pepperidge Farm or one of those fru-fru loaves. But then I remembered the grocery store bakery sells "Garlic Munchies" which are mini-toasts so I just bought a bag of those.
I did not use a saucepan and then a chafing dish. Instead I just made it all in a mini-crock pot which I own two of thanks to Macy's Black Friday Freebates but have never used either one - so something else in my pantry waiting for a purpose!
I added the cream cheese and the soup and turned the pot on low. I stirred frequently but wound up turning it up to High because it seemed like it reached a point of some meltiness but it wasn't completely melting.
In the end there were still flecks of unmelted cream cheese but I had to just add the rest of the ingredients because time was running out.
I think it turned out good because several ladies went back for more.
There was only a little bit left at the end of the night, maybe less than half a cup. I refrigerated it on Sunday night and had it for lunch on Wednesday and it was very satisfying.
