Mexican Corn Bread with Ground Meat
1 c. yellow cornmeal
2 eggs - well beaten
1 c. milk
1/2 tsp. (baking) soda
1/2 tsp. salt
1 can cream style corn
2 TBSP bacon dripping
Mix all of the above and set aside.
Great 1 1/2 lb. Long Horn cheese and set aside.
Saute: 1 lb. ground meat (until grey), 1 large onion - chopped, 3 seeded Jalapeno peppers chopped
Put half of the first mixture in a well-greased pan.
Then pour all the meat mixture over the first mixture.
Then all the cheeses over meat.
(There are no original instructions on when to pour the second-half of the first mixture. I put it on top of the cheese.)
Bake at 375 or 45 mins.
