Sweet Potato - Apple Casserole


There is no name on this recipe but it was obviously given by someone because whoever wrote it included a personal note addressed to my mother on the back with their experience using the recipe.

It sounded gross but actually was quite pleasant if you like yams at Thanksgiving.  (I am the only one in my house who does.)  I made a bargain with the sensory challenged kid - he ate all the apples, I ate all the yams.  But I did try them together and found it enjoyable.

I wanted to put the whole thing together the night before but I wasn't sure if the apples would turn brown so I just steamed the potatoes.  I forgot about them and the pot dried up and they got a little dark on the bottom but it did not affect the taste.  The peel comes off easily once they are steamed.  I sliced them (not length-wise) and left them in stacks in the plastic container covered in the fridge. 

The potatoes were easy to separate and lay out in the pan.  I was happy to use up some of our pandemic - school lunch apples.

All I had to do was slice off the peel since they were already cored and sliced.

Of course, I only made 1/2 the recipe.  We also had pandemic school lunch apple juice boxes.  Half a recipe called for 4 oz.  These were 4.25 - I used the whole thing.



The juice started to steam and by the time I mixed the corn starch and water it was at a fast simmer.

It didn't take long to thicken.  Then it got mostly clear.

 Once I added the honey it got very clear.

Whoops, stirring with my mini-spatula was too much heat!

I switched to a spoon to finish stirring in the honey.

I was tempted to pour the sauce over but I used the spoon to get a very even distribution, making sure it ran down the back of the apples.

I was tempted to use a little less wheat germ but wound up using the full amount to get complete coverage.
I was a little disappointed that some of the wheat germ stayed dry after 1 hour in the oven but it didn't affect the taste.

I think this would be great for a holiday side dish.
