Cubed Steaks with Fresh Tomato Sauce
I wasn't sure which recipe on the page was the one my mom wanted to save. The more I worked through this recipe I realized this wasn't it. Because it is a copy of a cookbook page and a lot of the words on the right edge were cut off so if she had ever made it I would think she would have written in the missing parts.
I gathered all my ingredients first. The recipe called for "cold water" with no amount specified. It may have been in the missing words - but I guessed 1 cup. Also, my family does not care for fresh tomatoes that are heated AND I had a partial can of chopped tomatoes already opened so I just used those instead, including the juice (undrained).
I only had 1 lb. of cube steaks so I cut the other recipe ingredient amounts by half.
I could not see how many minutes per side I was supposed to cook the steaks. I turned them over every three minutes and cooked until I didn't see pink blood coming out of the middle. Probably 15 - 20 minutes total cooking time.
Did you know you can put most ceramic dinner plates into the oven at lower temperatures? I put the cooked cube steaks on a dinner plate and turned my convection oven to warm. The steaks were at a perfect eating temperature when I took them out but they did not dry out. The plate did require a pot holder to touch.
Because there was a lot of "good stuff" left in the pan I added only the water first and scraped up the bits and stirred them around in the water.
I added the rest of the ingredients (except cornstarch and water) and mixed well.
After adding the cornstarch and water I worried that it had gotten clumpy - turned out it was just a piece of onion I had seen. The sauce thickened slightly but not tremendously - not sure if that's what it was supposed to do or if it was because I'd added too much "cold water" (not being able to read the actual recommended amount).
We've been eating a lot of cube steak lately because it's been on sale. This sauce was a simple addition that brought a refreshing change and lots of nice flavor without being too much of anything. Usually when a recipe includes a sauce that is served over or on the side - I'm the only one who uses it. Obviously the sensory challenged eater did avoided the tomatoes and onions (and therefore the entire sauce) like it had the corona virus, but myself and the other eater enjoyed it. I even put some on top of my boiled potato cubes and enjoyed it there too!
I had enough sauce left over in the pan I froze it and will add it to something else in the future. Maybe just throw it on top of some stew meat and make tacos or serve over rice.
